case of the monday's

Deep-Dish Pizza Casserole:
That's what was for dinner tonight! YUMMY :)

Ingredients:
1lb lean ground beef
1 can Italian style diced tomatoes
1 10 oz package of pizza dough
6 slices of reduced fat provalone cheese

Preheat oven to 425 degrees. Brown meat, drain then add tomatoes til heated. Unroll dough and place into baking dish (1/2 way up the sides). Put down 3 pieces of cheese then put meat/tomato mixture on top of that. Cook for 12 minutes. Put remaining 3 pieces of cheese on top (I cut mine in half then put on top) Cook for additional 5 minutes. Cool for 5 minutes and serve :) Makes 6 servings. I followed the recipe from my cookbook which said was 6 pts per slice...but I double check all my points with the ingredients I buy and my casserole came to 8pts per slice...oh well - it was delicious :)

I lost 1/2 lb this week totaling 10.7 lbs in 6 weeks and 48.5 lbs total :)

10 lbs!

I've been back on the wagon of weight watchers for 5 weeks now and I've lost 10.2 lbs! 48lbs total. 7 more pounds and then I can go back to meetings for free! :) but my new goal is to lose 17 more pounds.

My new cookbook is so amazing! Joe loves it too :) For Valentine's Day I cooked steak, baked potatoes, and has salad with it. and FF icecream for dessert..yum.
Last night I cut up the left over steak and followed a steak fajita recipe from the cook book. Let me tell you - it didn't even feel like I was eating healthy. I had 1/2 cup of white rice and 3/4 cup steak/stirfry, 1 whole wheat tortilla - all that for 6 points and it was SO filling!!! For dessert I had 1 cup ff vanilla icecream and 2 tbsp FF SF caramel - I could have done with only 1 tbsp..I know for next time. the icecream/caramel was 4 pts total.
Thursday is the next night I plan to cook - and I'm so excited for it: Fettucini with artichoke hearts - so excited. I also bought garlic bread sticks (Fairly good size) and they are only 2 pts per one...definitely worth it when craving carbs!

Saturdays are so hard

Saturdays are so difficult for me to stay within my points... It's the only day of the week where I wake up early and stay up late :/

Angel Hair Pasta with Clams

FABULOUS!!!

The recipe said it would be 4 servings...so I started with 1 cup for myself, 2 cups for my husband, and 1 cup for my leftovers for lunch (today). And there was still a lot left in the pan - so I think they are considering a serving to be 1 1/2 cups - recipe makes about 6 cups. Although the 1 cup was plenty filling for me :) I think I would have been all clammed out if I had a "full serving"

Cooking Light - 5 ingredients 15 minutes

Angel Hair Pasta with Clams

8 oz angel hair pasta, uncooked
1 tsp olive oil
1 1/2 tsp minced garlic
3 (6.5 oz) cans minced clams
2 tbsp freshly grated parmesan cheese
ground pepper to taste

13 minutes
yields 4 servings
6pts per serving
I don't know how big a serving is yet - I'll keep everyone posted.


I'm serving with sauteed zuchinni - yum :) 0 pts

it's time for bed...eventually

My points are gone for the day (which is good - since it's nearly midnight)...It's definitely time for bed - but I wouldn't mind finding something to munch on. I'm fighting the urge.

Tomorrow is super bowl - and my goal is not to use any of my flex points for the week.. It will be my first week since recommiting myself to weight watchers (4 weeks) where I didnt' dip into those extra points. & it's the last day before weigh in on monday :)

today was a great day!

I was able to wear my size 8 black work pants!! all day pain free!

weight loss since Jan. 11 - 8.3 lbs
total weight loss - 46.5 lbs

goal to lose 65 lbs.... 18.5 lbs to go

It's payday - woo hoo :) Too bad all of it is spoken for as of next week on 2 car payments and 1/2 of the mortgage payment.
It stinks that eatting healthier can be more expensive - but I've recently discovered Randazzo's fruit and veggie store!! CHEAP CHEAP CHEAP!!! It's so great :)
I am also very fortunate that the Dollar Tree in my town has a frozen food section - so it's almost a full grocery store, lol. They are a lot of great finds there for my lifestyle/"diet"

Tonight I am meeting up with a couple friends at Applebee's - so here is my plan for the day:

(tossed and turned tonight so I foresee LOTS of coffee)

Planning is the key

Superbowl Sunday is 3 days away! I need to plan for a successful day. So I've decided I'm going to make a dip to bring with tortilla chips. It's not going to be crazy healthy but I only plan on having a little bit because I'm going to bring my own food to munch on. I still have to figure out the points for the dip - but here's the recipe.

2 blocks ff cream cheese
2 (16oz) cans hormel chili
taco cheese
black olives

Soften the cream cheese and spread in a baking dish (cake pan size)
layer with the chili and then sprinkle the cheese and olives on top.
It needs to bake but I don't remember for how long and at what temperature....(sorry)

When I go to the store I'm gonna see if they have any better chili options with less cal, fat and sodium.. and hopefully I can find taco cheese that is lowfat :)

There is going to be drinking so I have 2 options to choose from..
1.) 22 oz can Sugar Free monster with 1 shot of flavored vodka.
(I figure it's a lot of liquid that it will take me awhile to drink..therefore I won't have too many calories in the drinking department)
2.) Bud select 55 (beer that only has 55 cal per 12 oz) so only 1 pt. Problem is I don't want to buy a 6 pack because my husband and I are trying to save money. and I know he will want a 6 pack of his own.
So just as I type this up I think I've made my decision on choice number 1.

Snacks to bring for me:
Tuna/crackers kit = 2pts
fruit roll up = 1pt
baby carrots = 0pts
100 cal chips of some sort = 2pts
SF GUM - biggest loser suggestion haha

I think I'm going to eat a smart ones dinner before I go over there as well :)

New day - maintaining my winning attitude!

Today is Wednesday - hump day.. & I'm excited for the day. My allotted points for the day is 25. I've already had my morning coffee (1pt for creamer) and fiber one cereal and 1/2 cup milk (1pt). I'm about to go put together my lunch and snacks for the work day. (working today 12-8)

Banana - 2pts
2 clementines - 1pt
1 cup beef stew - 4pts
2 pieces of ww bread - 1pt
ff tuna salad with crackers - 2pts
packaged cut up apples - 0pts
strawberry hostess cakes - 1pt

I know I'll have 1-2 cups of coffee at work ~ 3 pts for 2 cups.
Here is my favorite coffee flavor recipe:
1/2 pouch of Sugar free hot cocoa (1pt for whole pouch so I split it into 2 cups of coffee)
1 creamer (1 tbsp I think)
1 splenda
In the summer I put it over ice - YUM!

prospected points for the day: 16
9 pts remaining - I'll figure out what I'll do with them later :)

it's midnight...

It's midnight and I am so tired... I am laying in bed with my netbook in my lap listening to my husband snore, well until I poke him to get him to wake up just enough to stop :P
I'm feeling very motivated and inspired by losing weight and being healthy that I don't want to go to sleep. I just keep reading the weight watchers facebook wall to see if I can help anyone :)
I can't wait for Thursday because I'm excited to cook dinner again. (poke...didn't work..poking again) Sunday, Monday, Thursday and Saturday's are the only nights I am home to cook dinner..although Saturday Joe always convinces me to go out for dinner...ugh - I need to say no this weekend because of Superbowl - need to save flex points just in case there is yummy tempting food at the party we are going to.. still figuring out what I'm going to make/bring :) (this party is also doubling as a housewarming party)
Aright...I guess I'll go to sleep - and what I really mean is: I'll check ww facebook wall one more time and then put the computer down.

Before (March 2007 -215 lbs) ~ After (Sept 2009 - 157 lbs)


By using Weight Watchers I have been very successful in my weigh loss journey.. Since my after picture I had gained 20 lbs. So I decided to be more of a stickler to my weight loss success by doing weight watchers again FULL time instead of part time. I've been back on the wagon for 3 weeks and I've already lost 7.2 lbs :) 10 lbs away from my goal weight at weight watchers. I would like to lose 20 more pounds by July 26th (25 weeks)... Wish me luck :)

5 ingredients - 15 minutes

My new cookbook - my goal is to cook everything in the cookbook regardless if it sounds good or not & without altering the recipe to my own liking. I believe there are just under 100 recipes and I have done 2 so far.

Last night I used my crock pot for the first time (which I received as a gift for my wedding oct. 08) to make a stew.

2 medium zucchini's cut into bite size pieces - place at bottom of crock pot
3/4 lb beef stew pieces - layer on top of zucchini
1/2 tsp ground pepper
1/4 tsp ground cinnomen
2 can's Italian diced tomatoes (include juices)
1 hour on high, 7 hours on low or 5 hours on high

My husband, Joe and I had sun-dried tomato bread to accompany it - SO DELICIOUS!! I love carbs :)

I'm excited for my leftovers for lunch today.
